Job Title: Bar Controller – Stock & Store

Department: Food & Beverage / Bar

Reports To: Bar Manager / Operations Manager / Finance Manager

Job Purpose

The Bar Controller will be responsible for controlling bar inventory, monitoring stock movement and consumption, reconciling sales and cash, and maintaining accurate records to minimize losses and ensure effective stock management.

Key Responsibilities

● Receive and verify bar stock delivered against purchase orders, delivery notes, and invoices.

● Record all incoming and outgoing bar stock accurately.

● Maintain up-to-date stock records for beverages, supplies, and other bar-related items.

● Monitor daily stock levels and identify items requiring replenishment.

● Issue bar stock to authorized personnel based on approved requisitions.

● Monitor stock consumption against sales and identify unusual variances or discrepancies.

● Prepare daily, weekly, and monthly bar stock reports.

● Investigate and report stock shortages, overages, wastage, breakages, and unexplained variances.

● Ensure proper storage, organization, and security of bar stock.

● Monitor expiry dates and ensure proper stock rotation using appropriate inventory-control principles.

● Maintain proper documentation for stock receipts, issues, transfers, returns, and adjustments.

● Assist with purchasing and communicate stock requirements to the relevant department.

● Coordinate with the bar team, kitchen, finance, procurement, and management on stock-related matters.

Qualifications & Experience

● Diploma or certificate in Accounting, Inventory Management, Logistics, Hospitality, Business Administration, or a related field is an advantage.

● Previous experience in bar stock control, inventory management, storekeeping, or hospitality operations.

● Experience with cash and sales reconciliation.

● Good understanding of stock-taking and inventory control procedures.

● Excellent attention to detail and accuracy.

● Ability to identify and investigate stock discrepancies.

● Ability to work flexible hours, including evenings, weekends, and public holidays where required.
